Description

Ingredients

  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 cups cooked pasta (elbow or ziti)
  • 2 cups tomato sauce
  • 1 cup corn
  • 1 cup black beans, drained and rinsed
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Add the onions, bell pepper, and garlic; cook until vegetables are soft.
  3. Stir in the cooked pasta, tomato sauce, corn, black beans, cumin, chili powder, salt, and pepper. Mix well.
  4. Transfer the mixture to a greased casserole dish. Top with shredded cheese.
  5. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  6. Garnish with fresh cilantro if desired and serve hot.

Notes

For a spicier dish, add a pinch of red pepper flakes. Feel free to customize the casserole with your choice of vegetables or pasta types.
