- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 cups cooked pasta (elbow or ziti)
- 2 cups tomato sauce
- 1 cup corn
- 1 cup black beans, drained and rinsed
- 1 tsp cumin
- 1 tsp chili powder
- 1 cup shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Add the onions, bell pepper, and garlic; cook until vegetables are soft.
- Stir in the cooked pasta, tomato sauce, corn, black beans, cumin, chili powder, salt, and pepper. Mix well.
- Transfer the mixture to a greased casserole dish. Top with shredded cheese.
- Bake for 20-25 minutes or until the cheese is melted and bubbly.
- Garnish with fresh cilantro if desired and serve hot.
Notes
For a spicier dish, add a pinch of red pepper flakes. Feel free to customize the casserole with your choice of vegetables or pasta types.
