  • 2 tomatoes, finely diced (about 300 g)
  • 1/2 bunch cilantro, roughly chopped
  • 1/2 red onion, finely diced
  • 1 tbsp (15 ml) lime juice
  • 1/2 tsp (3 ml) sea salt
  • 1 avocado
  • 1/3 cup plain yogurt (80 ml)
  • 1/2 bunch cilantro, roughly chopped
  • 1/2 tsp (3 ml) freshly minced garlic
  • 1 tbsp (15 ml) lime juice
  • 1/2 tsp (3 ml) sea salt
  • 1/2 tsp (3 ml) cracked black pepper
  • 12 tbsp (30 ml) water, to loosen as required
  • 1 tbsp (15 ml) olive oil
  • 1/2 red onion, finely diced
  • 1 tsp (5 ml) freshly minced garlic
  • 500 g lean minced beef
  • 1/2 bell pepper, finely diced
  • 2 tsp (10 ml) sweet paprika
  • 1 tsp (5 ml) ground cumin
  • 1 tsp (5 ml) onion powder
  • 1 tsp (5 ml) dried oregano
  • 1 tsp (5 ml) sea salt
  • 1/2 tsp (3 ml) cracked black pepper
  • 2 tbsp (30 ml) tomato paste
  • 1/4 cup water (60 ml)
  • 4 large tortillas
  • 1 cup freshly grated melting cheese (125 g), e.g. colby or cheddar

Instructions

  1. To prepare the tomato salsa, mix all the ingredients in a small bowl and put it aside for later use.
  2. For the avocado dip, place all components, excluding the water, into a food processor. Blend them until smooth, which should take about 1 to 2 minutes. Gradually add the water, one tablespoon at a time, blending after each addition, until you achieve the desired consistency. Set this aside as well.
  3. Warm the olive oil in a large, sturdy frying pan over medium to high heat. Introduce the onion and garlic, stirring continuously for 2 minutes.
  4. Incorporate the beef into the pan and cook it for approximately 3 to 4 minutes until it turns brown. Add the bell pepper and continue cooking for another 2 minutes.
  5. Combine the rest of the ingredients and simmer over medium heat for 2 minutes, or until most of the liquid reduces. Allow it to cool slightly.
  6. To put together the quesadillas, warm each tortilla in a large, sturdy frying pan over medium to high heat for 30 seconds. Flip it over and place one-fourth of the beef mixture on half of the tortilla. Sprinkle one-fourth of the cheese on top. Fold the empty half over the filling. Flip the tortilla quickly using a spatula. Cook for another 30 seconds, or until it’s crispy. Repeat this with the remaining tortillas.
  7. Let them cool down slightly. Fill with the tomato salsa, slice into thirds, and serve with the avocado dip on the side.

Notes

  • Use Greek yogurt instead of plain yogurt in the avocado dip for a healthier option.
  • Add diced jalapenos or chili flakes to the beef mixture for an extra kick of heat.
  • Opt for whole wheat tortillas to increase fiber and nutrients in your quesadillas.
