Description

A comforting and hearty beef stew filled with tender beef and vibrant vegetables, perfect for family gatherings.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Remove the beef and set aside.
  4. In the same pot, add the onion and garlic; sauté until soft.
  5. Stir in the tomato paste, then add the beef back to the pot.
  6. Pour in the beef broth and add carrots, potatoes, thyme, bay leaf, salt, and pepper.
  7. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.
  8. Remove the bay leaf and serve hot.
