Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 1 onion, chopped
- 3 carrots, sliced
- 2 potatoes, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the beef cubes and brown on all sides.
- Remove the beef and set aside.
- In the same pot, add the onion and garlic; sauté until soft.
- Stir in the tomato paste, then add the beef back to the pot.
- Pour in the beef broth and add carrots, potatoes, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.
- Remove the bay leaf and serve hot.
