Description

Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add the beef chunks, season with salt and pepper, and brown on all sides. Remove the beef and set aside.
  3. In the same pot, add the chopped onion and minced garlic, sauté until softened.
  4. Stir in the tomato paste, thyme, and paprika; allow to meld together.
  5. Return the beef to the pot, add the beef broth, sliced carrots, and diced potatoes.
  6. Bring to a boil, then reduce heat to low and let simmer for about 2 hours.
  7. Adjust seasoning with salt and pepper as needed, and serve hot.

Notes

For a thicker stew, consider adding a cornstarch slurry towards the end of cooking. Customize the vegetable choices as desired.
