Ingredients

- 2 pounds beef chuck, cut into 1-inch pieces
- 4 cups beef broth
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Add the beef chunks, season with salt and pepper, and brown on all sides. Remove the beef and set aside.
- In the same pot, add the chopped onion and minced garlic, sauté until softened.
- Stir in the tomato paste, thyme, and paprika; allow to meld together.
- Return the beef to the pot, add the beef broth, sliced carrots, and diced potatoes.
- Bring to a boil, then reduce heat to low and let simmer for about 2 hours.
- Adjust seasoning with salt and pepper as needed, and serve hot.
Notes
For a thicker stew, consider adding a cornstarch slurry towards the end of cooking. Customize the vegetable choices as desired.
