Classic beef stroganoff featuring tender cuts of beef in a rich, creamy mushroom sauce served over egg noodles.
Ingredients

- 1 pound tenderloin or sirloin, sliced
- 8 ounces mushrooms, sliced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 cup sour cream
- 2 tablespoons flour
- 2 tablespoons butter
- 2 tablespoons vegetable oil
- 12 ounces egg noodles
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season beef with salt and pepper.
- Heat oil in a large skillet and brown meat in batches. Remove and set aside.
- In the same pan, sauté mushrooms and onions until golden.
- Add garlic and flour, cooking for 1 minute.
- Slowly add beef broth, stirring constantly.
- Return meat to pan and simmer until sauce thickens.
- Cook egg noodles according to package instructions.
- Remove from heat and stir in room temperature sour cream.
- Serve over noodles, garnished with parsley.
Notes
- Use room temperature sour cream to prevent curdling.
- For slow cooker version, cook on low 6-7 hours.
- Can add vegetables like peas or bell peppers.
- Substitute coconut cream for dairy-free option.
- Best served immediately while sauce is hot.
