Ingredients

- 1 lb beef sirloin, cut into thin strips
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 8 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 cup sour cream
- Salt and pepper to taste
- 12 oz egg noodles
- Fresh parsley for garnish
Instructions
- Cook the egg noodles according to package instructions; drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the beef and cook until browned; remove and set aside.
- In the same skillet, add the onion and mushrooms, cooking until softened.
- Stir in the garlic and cook for another minute.
- Return the beef to the skillet and add the beef broth; bring to a simmer.
- Reduce heat and stir in the sour cream, cooking until heated through. Season with salt and pepper.
- Serve over the egg noodles and garnish with fresh parsley.
Notes
For a thicker sauce, simmer longer before adding sour cream or add a tablespoon of flour before returning the beef to the skillet.
