Ingredients

  • 1 lb beef sirloin or tenderloin, cut into strips

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 cup sour cream
  • Salt and pepper to taste
  • 8 oz egg noodles
  • Fresh parsley for garnish (optional)

Instructions

  1. Boil water in a large pot and cook the egg noodles until al dente. Drain and set aside.
  2. Heat olive oil or butter in a large skillet over medium-high heat. Sauté the onions until translucent.
  3. Add garlic and mushrooms to the skillet, cooking until mushrooms soften.
  4. Include beef strips and cook until browned on all sides, about 5-7 minutes.
  5. Pour in beef broth, Worcestershire sauce, and Dijon mustard. Simmer for about 5 minutes.
  6. Lower the heat and stir in sour cream. Cook until the sauce is creamy and warmed through. Season with salt and pepper.
  7. Combine the cooked egg noodles with the beef and sauce mixture, tossing until well coated. Serve hot, garnished with fresh parsley if desired.

Notes

For a richer flavor, you can replace a portion of the beef broth with heavy cream. Use high-quality beef broth for the best flavor.
