- 1 lb beef sirloin or tenderloin, cut into strips
- 2 tablespoons olive oil or butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 cup sour cream
- Salt and pepper to taste
- 8 oz egg noodles
- Fresh parsley for garnish (optional)
Instructions
- Boil water in a large pot and cook the egg noodles until al dente. Drain and set aside.
- Heat olive oil or butter in a large skillet over medium-high heat. Sauté the onions until translucent.
- Add garlic and mushrooms to the skillet, cooking until mushrooms soften.
- Include beef strips and cook until browned on all sides, about 5-7 minutes.
- Pour in beef broth, Worcestershire sauce, and Dijon mustard. Simmer for about 5 minutes.
- Lower the heat and stir in sour cream. Cook until the sauce is creamy and warmed through. Season with salt and pepper.
- Combine the cooked egg noodles with the beef and sauce mixture, tossing until well coated. Serve hot, garnished with fresh parsley if desired.
Notes
For a richer flavor, you can replace a portion of the beef broth with heavy cream. Use high-quality beef broth for the best flavor.
