  • 4 ounces vegetable oil (113 g)
  • 4 green onions, sliced (white parts only)
  • 4 tablespoons all-purpose flour (60 g)
  • 1 (10.5 ounce) can condensed beef broth (298 ml)
  • 1 teaspoon prepared mustard (5 ml)
  • 1 (6 ounce) can sliced mushrooms, drained (170 g)
  • 1/3 cup sour cream (80 ml)
  • 1/3 cup (80 ml) apple juice or grape juice
  • salt and ground black pepper to taste

Instructions

  1. Trim any excess fat and connective tissue from the beef chuck roast, then slice it into strips measuring ½-inch thick and 2-inches long. Sprinkle with ½ teaspoon of salt and ½ teaspoon of pepper.
  2. In a large frying pan set over medium heat, heat the vegetable oil. Add the beef and sear it quickly until browned.
  3. Move the beef to one side of the pan. Add the sliced green onions and cook, stirring occasionally, for 3 to 5 minutes before moving them over with the beef.
  4. Incorporate the flour into the pan juices on the vacant side of the skillet. Pour in the condensed beef broth, stirring continuously, and bring the mixture to a boil. Lower the heat, mix in the mustard, cover, and let it simmer until the beef becomes tender, approximately 1 hour.
  5. About 5 minutes before you’re ready to serve, add the drained mushrooms, sour cream, and apple or grape juice to the pan. Cook until everything is warmed through, then adjust the seasoning with additional salt and pepper if needed.
  6. Serve the dish over freshly cooked hot noodles and enjoy.
