- 2 cups cottage cheese
- 4 large eggs
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1 cup rolled oats
- 1/4 cup almond flour
- 3 tablespoons butter, melted
- 2 tablespoons brown sugar
- 1/2 teaspoon cinnamon
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- In a large bowl, blend cottage cheese until smooth. Mix in eggs, honey, and vanilla extract.
- Stir in flour, baking powder, and salt until just combined.
- Gently fold in the mixed berries and pour the batter into the prepared baking dish.
- In a separate bowl, combine rolled oats, almond flour, melted butter, brown sugar, and cinnamon.
- Sprinkle the oat topping evenly over the batter.
- Bake for 35-40 minutes until the top is golden and the center is set.
- Allow to cool for 10 minutes before serving. Can be enjoyed warm or cold.

- Can be stored in the refrigerator for up to 5 days.
- For dairy-free option, use dairy-free cottage cheese alternative and coconut oil instead of butter.
- For gluten-free version, substitute all-purpose flour with gluten-free flour blend and use certified gluten-free oats.
