  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 cup rolled oats
  • 1/4 cup almond flour
  • 3 tablespoons butter, melted
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. In a large bowl, blend cottage cheese until smooth. Mix in eggs, honey, and vanilla extract.
  3. Stir in flour, baking powder, and salt until just combined.
  4. Gently fold in the mixed berries and pour the batter into the prepared baking dish.
  5. In a separate bowl, combine rolled oats, almond flour, melted butter, brown sugar, and cinnamon.
  6. Sprinkle the oat topping evenly over the batter.
  7. Bake for 35-40 minutes until the top is golden and the center is set.
  8. Allow to cool for 10 minutes before serving. Can be enjoyed warm or cold.
