- 2 cups all-purpose flour
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 4 overripe bananas
- 1 cup sugar
- 3/4 cup unsalted butter (1 1/2 sticks), melted and cooled
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup finely chopped pecans
- Confectioners’ sugar (for dusting the bread after cooking – optional)
Instructions
- Preheat your oven to 350 degrees.
- Lightly grease a 9 x 5 loaf pan.
- In a large bowl, combine the all-purpose flour, baking soda, and salt.
- In a separate bowl, mash two bananas with a fork, ensuring that they retain some texture.
- With an electric mixer, mix the other two bananas and sugar in a large bowl for at least three minutes until the mixture is light and fluffy.
- Add melted butter, eggs, and vanilla to the banana cream mixture. Beat well, scraping down the sides of the bowl as needed.
- Gently fold the dry ingredients into the banana mixture until well combined, being careful not to overmix. Incorporate the chopped pecans and the previously mashed bananas with a rubber spatula.
- Pour the batter into the greased loaf pan. Tap the pan on the counter to release any air bubbles.
- Bake for 50 minutes to 1 hour, depending on your oven. Rotate the bread to ensure even browning. The banana bread will be golden brown when done. Check doneness with a toothpick; it should come out clean.
- Let the bread cool in the pan for at least 10 minutes before transferring it to a wire rack. Serve toasted with a sprinkle of confectioners’ sugar, if desired.
