Description

A hearty and healthy cabbage soup that warms the soul with fresh vegetables and aromatic herbs.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 medium head of green cabbage, cored and shredded
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 (28 ounce) can crushed tomatoes
  • 8 cups vegetable broth (or chicken broth)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 1 bay leaf
  • 1 tablespoon apple cider vinegar
  • Fresh parsley, chopped (for garnish)
  • Optional: Cooked sausage, diced (Italian or kielbasa)
  • Optional: Diced potatoes (russet or Yukon gold)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until softened and translucent, about 5–7 minutes.
  2. Add minced garlic and cook for an additional minute.
  3. Add shredded cabbage, diced carrots, and diced celery. Stir and cook for another 5–7 minutes.
  4. Pour in crushed tomatoes and vegetable broth. Stir in oregano, thyme, smoked paprika, and red pepper flakes. Season with salt and pepper, add bay leaf.
  5. Bring to a boil, then reduce heat to low, cover, and let simmer for at least 30 minutes, stirring occasionally.
  6. If desired, add cooked sausage during the last 15-20 minutes or diced potatoes during the last 20-25 minutes of simmering.
  7. Stir in apple cider vinegar before serving and adjust seasoning to taste. Remove bay leaf before serving. Garnish with fresh parsley.

Notes

For added flavor, consider batch cooking and freezing portions for quick meals. Experiment with seasonal vegetables and grains.
