Ingredients

  • – 2 cups (480 ml) granulated sugar
  • – 1/2 cup (120 ml) vegetable oil, softened
  • – 3 large eggs
  • – 2 teaspoons (10 ml) vanilla extract
  • – 15 ounces (425 g) canned pumpkin
  • – 2 3/4 cups (330 g) all-purpose flour
  • – 1/2 teaspoon (2.5 ml) baking powder
  • – 1 1/2 teaspoons (7.5 ml) baking soda
  • – 1 teaspoon (5 ml) salt
  • – 3/4 teaspoon (4 ml) ground cinnamon
  • – 1/4 teaspoon (1.25 ml) ground cloves
  • – 1/4 teaspoon (1.25 ml) ground nutmeg
  • – 1/2 cup (120 ml) milk
  • – 12 ounce package (340 g) chocolate chips

Instructions

  1. Set your oven to a temperature of 350 degrees Fahrenheit. Cover the base of two loaf pans measuring 8.5 by 4.5 inches with parchment paper, then coat the entire interior with cooking spray.
  2. Place the sugar and softened vegetable oil in a mixing bowl, and blend them together using an electric mixer until they are thoroughly mixed. Incorporate the eggs, canned pumpkin, and vanilla extract, stirring until well blended.
  3. In a different bowl, combine the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground cloves, and ground nutmeg.
  4. Gradually add the dry ingredients to the pumpkin mixture, alternating with the milk, beginning and finishing with the flour mixture. Gently fold in the chocolate chips at the end.
  5. Divide the batter evenly between the prepared pans. Bake at 350 degrees Fahrenheit for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean. Allow the loaves to cool in the pans for a short while before transferring them to a wire rack to finish cooling.
  6. If making smaller loaves, they will need to bake for approximately 25 to 35 minutes.

Notes

  • Soften the vegetable oil before mixing with sugar for a smoother batter texture.
  • Opt for canned pumpkin to enhance moisture and flavor, adjusting spices to taste.
  • Gently fold in chocolate chips at the end to evenly distribute in the batter.
