Ingredients
- – 2 cups (480 ml) granulated sugar
- – 1/2 cup (120 ml) vegetable oil, softened
- – 3 large eggs
- – 2 teaspoons (10 ml) vanilla extract
- – 15 ounces (425 g) canned pumpkin
- – 2 3/4 cups (330 g) all-purpose flour
- – 1/2 teaspoon (2.5 ml) baking powder
- – 1 1/2 teaspoons (7.5 ml) baking soda
- – 1 teaspoon (5 ml) salt
- – 3/4 teaspoon (4 ml) ground cinnamon
- – 1/4 teaspoon (1.25 ml) ground cloves
- – 1/4 teaspoon (1.25 ml) ground nutmeg
- – 1/2 cup (120 ml) milk
- – 12 ounce package (340 g) chocolate chips
Instructions
- Set your oven to a temperature of 350 degrees Fahrenheit. Cover the base of two loaf pans measuring 8.5 by 4.5 inches with parchment paper, then coat the entire interior with cooking spray.
- Place the sugar and softened vegetable oil in a mixing bowl, and blend them together using an electric mixer until they are thoroughly mixed. Incorporate the eggs, canned pumpkin, and vanilla extract, stirring until well blended.
- In a different bowl, combine the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, ground cloves, and ground nutmeg.
- Gradually add the dry ingredients to the pumpkin mixture, alternating with the milk, beginning and finishing with the flour mixture. Gently fold in the chocolate chips at the end.
- Divide the batter evenly between the prepared pans. Bake at 350 degrees Fahrenheit for 45 to 55 minutes, or until a toothpick inserted in the center comes out clean. Allow the loaves to cool in the pans for a short while before transferring them to a wire rack to finish cooling.
- If making smaller loaves, they will need to bake for approximately 25 to 35 minutes.
Notes
- Soften the vegetable oil before mixing with sugar for a smoother batter texture.
- Opt for canned pumpkin to enhance moisture and flavor, adjusting spices to taste.
- Gently fold in chocolate chips at the end to evenly distribute in the batter.
