Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onions and garlic, sautéing until translucent and fragrant.
  2. Stir in the flour to create a roux and cook for a minute.
  3. Add the cubed potatoes and pour in the broth, bringing to a simmer.
  4. Cook until the potatoes are tender, about 15-20 minutes.
  5. Use an immersion blender or transfer a portion of the soup to a blender to achieve desired consistency.
