Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onions and garlic, sautéing until translucent and fragrant.
- Stir in the flour to create a roux and cook for a minute.
- Add the cubed potatoes and pour in the broth, bringing to a simmer.
- Cook until the potatoes are tender, about 15-20 minutes.
- Use an immersion blender or transfer a portion of the soup to a blender to achieve desired consistency.
- Return soup to pot and stir in milk or cream. Season with salt and pepper to taste.
- For added flavor, consider incorporating herbs during the simmering process.
Notes
For a richer flavor, sauté bacon bits with the onions and garlic. Adjust seasoning before serving for the best flavor.
