Ingredients

Instructions

  1. Heat a large pot over medium heat and drizzle in the olive oil.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Pour in the vegetable broth and bring to a gentle simmer.
  5. Add the mixed vegetables and let them simmer for 10-15 minutes until tender.
  6. Lower the heat and incorporate the heavy cream or coconut milk, stirring gently.
  7. Adjust seasoning with salt and pepper if needed. Serve hot.

Notes
