Instructions
- Heat a large pot over medium heat and drizzle in the olive oil.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Pour in the vegetable broth and bring to a gentle simmer.
- Add the mixed vegetables and let them simmer for 10-15 minutes until tender.
- Lower the heat and incorporate the heavy cream or coconut milk, stirring gently.
- Adjust seasoning with salt and pepper if needed. Serve hot.
Notes
For a thicker soup, use an immersion blender to puree part of the mixture. Add a pinch of dried herbs for extra flavor.
