Ingredients

  • 1 pound fish (cod, tilapia, or salmon)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon chili powder
  • ¼ teaspoon cumin
  • 1 tablespoon olive oil for cooking fish
  • 2 cups shredded cabbage mix (coleslaw)
  • ¼ cup cilantro, chopped
  • 1 whole jalapeño pepper, finely diced
  • 2 teaspoons honey
  • 2 teaspoons olive oil for slaw
  • Juice of 1 whole lime
  • Salt and pepper to taste
  • About 8 corn tortillas
  • Avocados and tomatoes for topping

Instructions

  1. Preheat your stove to medium heat. Heat a large skillet and add 1 tablespoon of olive oil.
  2. Add the seasoned fish to the skillet. Cook for about 3-4 minutes on each side or until the fish flakes easily with a fork.
  3. Warm the corn tortillas in a separate skillet for 30 seconds on each side.
  4. Assemble the tacos on each tortilla with fish pieces, topping with the cabbage slaw, avocado, and tomatoes.

Notes

For a non-spicy version, omit the jalapeño. Feel free to experiment with different fish or add a dollop of sour cream.
