  • 2 large eggs

  • 2 cups (480 ml) grated zucchini (about 300 grams)
  • 1/2 cup (120 ml) chopped walnuts or pecans (60 grams), optional

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×5-inch loaf pan and set it aside.
  3. In a large bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, and 1/2 teaspoon salt.
  4. In another bowl, combine 1/2 cup vegetable oil, 1 cup granulated sugar, 1/2 cup packed brown sugar, 2 large eggs, and 1 teaspoon vanilla extract. Mix well.
  5. Add the wet ingredients to the dry ingredients and stir until just combined.
  6. Gently fold in 2 cups grated zucchini until evenly distributed.
  7. If using, fold in 1/2 cup chopped walnuts or pecans.
