Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5-inch loaf pan and set it aside.
- In a large bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1 teaspoon ground cinnamon, and 1/2 teaspoon salt.
- In another bowl, combine 1/2 cup vegetable oil, 1 cup granulated sugar, 1/2 cup packed brown sugar, 2 large eggs, and 1 teaspoon vanilla extract. Mix well.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Gently fold in 2 cups grated zucchini until evenly distributed.
