Ingredients

Scale
  • 1 cup Greek yogurt
  • 1/2 cup sugar
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour

  3. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Gently fold in the blueberries.
  6. Fill the muffin cups about 2/3 full with the batter.

Notes

For best results, ensure your ingredients are at room temperature before mixing. Avoid overmixing the batter to keep muffins light and airy.
