Ingredients

  • 1 1/4 cups all-purpose flour (or gluten-free all-purpose flour)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 4 tablespoons granulated sugar
  • 1 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 2 eggs (lightly beaten)
  • 2 tablespoons milk (only if needed)
  • 2 tablespoons butter (for greasing the skillet or griddle)

Instructions

  1. Preheat your electric griddle to 350 degrees F or place a non-stick skillet over medium-high heat.
  2. In a large bowl, whisk together the wet ingredients: Greek yogurt, eggs, lemon juice, lemon zest, and vanilla extract until smooth.
  3. In another bowl, combine the dry ingredients: sugar, flour, baking powder, baking soda, salt, and cinnamon.
  4. Gradually mix the dry ingredients into the wet ingredients, whisking until smooth.
  5. If the batter is too thick, add milk one tablespoon at a time until the desired consistency.
  6. Melt butter on the heated griddle or skillet, coating the surface.
  7. Pour ¼ cup portions of batter onto the griddle, spaced two inches apart.
  8. Cook until bubbles form and edges set, about 2-4 minutes.
  9. Flip and cook for another 2-3 minutes until golden brown.

Notes

Experiment with adding berries or nuts for additional flavors. Serve warm with maple syrup or honey.
