A vibrant, nutritious salad featuring honey-glazed rainbow carrots, protein-rich lentils, and a creamy tahini dressing. Perfect as a make-ahead dish for parties or as a healthy weekday meal.

- 1 bunch rainbow carrots (or regular orange carrots)
- 2 tablespoons olive oil
- 1 tablespoon honey (or maple syrup for vegan option)
- 1 cup dried French lentils, rinsed
- 3 cups vegetable broth
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/3 cup pistachios, roughly chopped
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 tablespoon honey (or maple syrup for vegan option)
- 1 clove garlic, minced
- 3 tablespoons water
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Wash, peel, and cut carrots into 2-inch pieces.
- Toss carrots with olive oil, honey, salt and pepper. Arrange on baking sheet and roast for 20-25 minutes until caramelized and tender.
- While carrots roast, cook lentils in vegetable broth according to package instructions (approximately 20 minutes) until tender but not mushy. Drain well.
- Make tahini dressing by whisking together tahini, lemon juice, honey, garlic, water, salt and pepper until smooth.
- In a large bowl, combine cooked lentils, roasted carrots, chopped herbs, and pistachios.
- Just before serving, drizzle with tahini dressing and gently toss to combine.
Notes
- For a vegan version, substitute maple syrup for honey.
- This salad can be made up to 24 hours in advance – just add the dressing right before serving.
- Store leftovers in an airtight container for up to three days.
- For extra protein, add crumbled feta cheese or grilled chicken.
