Ingredients

  • 1 bunch rainbow carrots (or regular orange carrots)
  • 2 tablespoons olive oil
  • 1 tablespoon honey (or maple syrup for vegan option)
  • 1 cup dried French lentils, rinsed
  • 3 cups vegetable broth
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/3 cup pistachios, roughly chopped
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 tablespoon honey (or maple syrup for vegan option)
  • 1 clove garlic, minced
  • 3 tablespoons water
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wash, peel, and cut carrots into 2-inch pieces.
  2. Toss carrots with olive oil, honey, salt and pepper. Arrange on baking sheet and roast for 20-25 minutes until caramelized and tender.
  3. While carrots roast, cook lentils in vegetable broth according to package instructions (approximately 20 minutes) until tender but not mushy. Drain well.
  4. Make tahini dressing by whisking together tahini, lemon juice, honey, garlic, water, salt and pepper until smooth.
  5. In a large bowl, combine cooked lentils, roasted carrots, chopped herbs, and pistachios.
  6. Just before serving, drizzle with tahini dressing and gently toss to combine.

Notes

  • For a vegan version, substitute maple syrup for honey.
  • This salad can be made up to 24 hours in advance – just add the dressing right before serving.
  • Store leftovers in an airtight container for up to three days.
  • For extra protein, add crumbled feta cheese or grilled chicken.
