Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups quick cooking oats
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup lemon juice
  • 4 large eggs
  • 1 cup powdered sugar
  • 1 teaspoon lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, cream together the softened butter and granulated sugar until smooth.
  3. Mix in the quick oats, flour, and salt until combined to form a dough.
  4. Press the dough into the bottom of the prepared baking dish and bake for 15-20 minutes until lightly golden.
  5. In another bowl, whisk together the lemon juice, eggs, powdered sugar, and lemon zest.
  6. Pour the lemon filling over the baked shortbread crust.
  7. Return to the oven and bake for an additional 20-25 minutes until set.
