- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups quick cooking oats
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 cup lemon juice
- 4 large eggs
- 1 cup powdered sugar
- 1 teaspoon lemon zest
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, cream together the softened butter and granulated sugar until smooth.
- Mix in the quick oats, flour, and salt until combined to form a dough.
- Press the dough into the bottom of the prepared baking dish and bake for 15-20 minutes until lightly golden.
- In another bowl, whisk together the lemon juice, eggs, powdered sugar, and lemon zest.
- Pour the lemon filling over the baked shortbread crust.
- Return to the oven and bake for an additional 20-25 minutes until set.
- Let cool completely before cutting into bars. Enjoy!
