  • 110 g walnuts

Instructions

  1. Set your oven to a temperature of 350°F. Prepare a bread loaf pan by coating it with grease and a dusting of flour, using dimensions of approximately 9.25 inches in length, 5.25 inches in width, and 2.75 inches in depth. Toast the walnuts lightly on a skillet, being sure to stir constantly to prevent them from burning, then chop them into coarse pieces and allow them to cool to room temperature.
  2. In a bowl, blend together 8 tablespoons of room temperature vegetable oil and 150 grams of granulated sugar until well combined.
  3. Use a fork to mash the bananas until they resemble chunky applesauce, and incorporate them into the oil and sugar mixture along with 2 lightly beaten eggs, stirring until everything is well mixed.
  4. In a different bowl, combine 180 grams of all-purpose flour, 5 ml of baking soda, and 2.5 ml of salt, then fold this dry mixture into the wet batter.
  5. Add 2.5 ml of vanilla extract, then gently mix in the chopped walnuts and dried cranberries. Transfer the batter into the previously prepared loaf pan.
