Ingredients

  • 6 potatoes (cubed)
  • 24 oz mushrooms (sliced)
  • 1 carrot (grated)
  • 1 onion (diced)
  • 8 oz cream cheese
  • 1/4 cup sour cream
  • 1 tbsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Mrs. Dash
  • 1 tbsp chicken bouillon powder (or 1 cube)
  • 1 mushroom bouillon cube
  • 1 cup heavy cream
  • 3 tbsp fresh dill

Instructions

  1. Bring 12 cups of water to a boil in a large pot.
  2. Add the cubed potatoes and both bouillon cubes. Allow to simmer until the potatoes are tender, approximately 25 minutes. Remember to add the salt and pepper halfway through.
  3. While the potatoes cook, heat six tablespoons of oil in a skillet. Sauté the diced onions, grated carrots, and sliced mushrooms until they shrink in size, around ten minutes.
  4. Stir in the cream cheese and sour cream, mixing until completely melted and well combined.
  5. Once the potatoes are cooked through, add the sautéed mixture to the pot and bring everything to a simmer.
  6. Stir in the heavy cream and turn off the heat.
  7. Garnish with fresh dill or parsley.
  8. Serve warm alongside crusty bread.

Notes

For added flavor, consider using homemade chicken stock instead of water. Add a splash of lemon juice before serving for a refreshing note.
