- 6 potatoes (cubed)
- 24 oz mushrooms (sliced)
- 1 carrot (grated)
- 1 onion (diced)
- 8 oz cream cheese
- 1/4 cup sour cream
- 1 tbsp salt
- 1/2 tsp black pepper
- 1 tbsp Mrs. Dash
- 1 tbsp chicken bouillon powder (or 1 cube)
- 1 mushroom bouillon cube
- 1 cup heavy cream
- 3 tbsp fresh dill
Instructions
- Bring 12 cups of water to a boil in a large pot.
- Add the cubed potatoes and both bouillon cubes. Allow to simmer until the potatoes are tender, approximately 25 minutes. Remember to add the salt and pepper halfway through.
- While the potatoes cook, heat six tablespoons of oil in a skillet. Sauté the diced onions, grated carrots, and sliced mushrooms until they shrink in size, around ten minutes.
- Stir in the cream cheese and sour cream, mixing until completely melted and well combined.
- Once the potatoes are cooked through, add the sautéed mixture to the pot and bring everything to a simmer.
- Stir in the heavy cream and turn off the heat.
- Garnish with fresh dill or parsley.
- Serve warm alongside crusty bread.
Notes
For added flavor, consider using homemade chicken stock instead of water. Add a splash of lemon juice before serving for a refreshing note.
