- – 1/3 cup (80 ml) melted coconut oil
- – 1 tsp (5 ml) cinnamon
- – 1 tsp (5 ml) vanilla extract
- – 1/2 cup (90 g) dark chocolate chips
- – pinch of sea salt
Instructions
- Start by setting your oven to 350°F and prepare a loaf pan with a layer of parchment paper.
- Then, shred the zucchini and use a paper towel to remove all the extra water from it.
- Combine all the ingredients in a large bowl and mix them together thoroughly.
- Transfer the mixture into the prepared loaf pan and, if you like, sprinkle a few extra chocolate chips on top.
- Place in the oven and bake for 60 minutes, or until a toothpick inserted in the center comes out clean.
- If the top of the bread is browning too quickly, cover it with aluminum foil and continue baking until it’s fully done.
- Finally, let the bread cool completely before cutting it into slices and serving.
