Ingredients

- 2 pounds of Yukon Gold or Russet potatoes
- 4 tablespoons of olive oil
- Salt to taste
- Pepper to taste
- Fresh herbs (like rosemary or thyme) – optional
Instructions
- Preheat your oven to 425°F (220°C).
- Peel and cut the potatoes into even-sized chunks.
- In a large pot of boiling salted water, parboil the potatoes for about 10 minutes.
- Drain the potatoes and let them steam dry for a couple of minutes.
- Toss the potatoes in olive oil, salt, and pepper, and add any herbs if using.
- Spread them out on a baking sheet in a single layer.
- Roast in the oven for 30 to 40 minutes, turning halfway through, until golden and crispy.
- Serve hot and enjoy!
Notes
For extra crispiness, use a hot baking sheet and consider roughing up the potato surface after draining.
