Description

Crispy on the outside and fluffy on the inside, these roast potatoes are the perfect side dish for any meal.


Ingredients

  • 2 pounds of Yukon Gold or Russet potatoes
  • 4 tablespoons of olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh herbs (like rosemary or thyme) – optional

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cut the potatoes into even-sized chunks.
  3. In a large pot of boiling salted water, parboil the potatoes for about 10 minutes.
  4. Drain the potatoes and let them steam dry for a couple of minutes.
  5. Toss the potatoes in olive oil, salt, and pepper, and add any herbs if using.
  6. Spread them out on a baking sheet in a single layer.
  7. Roast in the oven for 30 to 40 minutes, turning halfway through, until golden and crispy.
  8. Serve hot and enjoy!

Notes

For extra crispiness, use a hot baking sheet and consider roughing up the potato surface after draining.
