Ingredients
Scale
- 2 cups vegetable broth
- 1 cup cannellini beans, cooked
- 2 cups mixed fresh vegetables (such as carrots, peas, and spinach)

- 1/2 cup water
- 1 tsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)

- In a large pot, heat the vegetable broth over medium heat.
- Add the mixed fresh vegetables and cooked cannellini beans to the pot. Season with garlic powder, onion powder, salt, and pepper. Simmer for about 10 minutes until vegetables are tender.

- Form dumplings from the dough and gently drop them into the simmering stew. Cook for an additional 5 to 7 minutes until the dumplings are fluffy and cooked through.
- Serve hot, garnished with fresh herbs if desired.
Notes
Experiment with additional herbs and spices like smoked paprika or fresh thyme. Let the stew sit for a few minutes before serving to deepen flavors.
