- 1 teaspoon (5 ml) salt

- 3 large eggs
- 1 cup (240 ml) vegetable oil
- 25 cups white sugar (450g)
- 3 teaspoons (15 ml) vanilla extract
- 2 cups (480 ml) grated zucchini
- 1 cup chopped walnuts (120g)
Instructions
- Collect all necessary items. Set your oven to 325°F (165°C) and allow it to heat up. Prepare two 8×4-inch loaf tins by greasing and dusting them with flour.
- In a large mixing bowl, combine the flour, salt, baking powder, baking soda, and cinnamon by sifting them together.
- In a separate large bowl, use an electric mixer to blend the eggs, vegetable oil, sugar, and vanilla extract until they are thoroughly mixed. Add the dry ingredients to this mixture and mix well.
- Gently fold in the grated zucchini and chopped walnuts until everything is evenly distributed.
- Divide the mixture between the prepared loaf tins.
- Place the tins in the preheated oven and bake until a toothpick inserted into the center of the loaves comes out clean, which should take between 40 to 60 minutes. Let the loaves cool in the tins on a wire rack for 20 minutes.
- Run a knife around the edges of the loaves to loosen them. Carefully turn them out onto a wire rack and let them cool fully.
