- 1 cup (240 ml) pancake mix (120 grams)
- 1/2 cup (120 ml) granulated sugar (100 grams)
- 1/2 cup (120 ml) coconut milk (120 milliliters)
- 1/2 cup (120 ml) water (120 milliliters)
- 2 large eggs
- 1/4 cup (60 ml) unsalted butter, melted (57 grams)
- 1/2 teaspoon (3 ml) vanilla extract
- 1/4 cup (60 ml) grated cheddar cheese (25 grams)
- 2 tablespoon (30 ml) s salted butter, for topping (28 grams)
- 2 tablespoon (30 ml) s grated coconut (optional ) (15 grams)
- Banana leaves for lining (optional )
Instructions
- Preheat the oven to 350°F (175°C).
- If using, line a baking pan or muffin tin with banana leaves.
- In a large bowl, combine the pancake mix and granulated sugar.
- In a separate bowl, whisk together the coconut milk, water, eggs, melted unsalted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients, mixing until just combined.
- Pour the batter into the prepared baking pan or muffin tin.
- Sprinkle the grated cheddar cheese evenly over the top of the batter.
- Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and immediately brush the top with the salted butter.
- If desired, sprinkle with grated coconut.
- Allow to cool slightly before serving.
