  • 1 cup (240 ml) pancake mix (120 grams)
  • 1/2 cup (120 ml) granulated sugar (100 grams)
  • 1/2 cup (120 ml) coconut milk (120 milliliters)
  • 1/2 cup (120 ml) water (120 milliliters)
  • 2 large eggs
  • 1/4 cup (60 ml) unsalted butter, melted (57 grams)
  • 1/2 teaspoon (3 ml) vanilla extract
  • 1/4 cup (60 ml) grated cheddar cheese (25 grams)
  • 2 tablespoon (30 ml) s salted butter, for topping (28 grams)
  • 2 tablespoon (30 ml) s grated coconut (optional ) (15 grams)
  • Banana leaves for lining (optional )

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. If using, line a baking pan or muffin tin with banana leaves.
  3. In a large bowl, combine the pancake mix and granulated sugar.
  4. In a separate bowl, whisk together the coconut milk, water, eggs, melted unsalted butter, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients, mixing until just combined.
  6. Pour the batter into the prepared baking pan or muffin tin.
  7. Sprinkle the grated cheddar cheese evenly over the top of the batter.
  8. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. Remove from the oven and immediately brush the top with the salted butter.
  10. If desired, sprinkle with grated coconut.
  11. Allow to cool slightly before serving.
