- 150 g all-purpose flour (1 1/4 cups)
- 1 large egg
- 35 g sugar (2 1/2 tbsp)
- 180 ml milk (3/4 cup)
- 3 tbsp (45 ml) vegetable oil (plus a little extra to grease the pan)
- 1/3 tsp (2 ml) baking powder
- 1/2 tsp (3 ml) baking soda
- 2 tbsp (30 ml) lemon juice
- 1 pinch salt
- 1 tsp (5 ml) vanilla extract
Instructions
- Place the all-purpose flour in a mixing bowl and create a small hollow in the center. Add baking powder, baking soda, lemon juice, sugar, salt, and vanilla extract to the hollow. Stir until everything is well blended.
- Warm up the vegetable oil gently, ensuring it doesn’t get too hot, and incorporate it into the flour mixture.
- Introduce the egg, which has been slightly whisked, and blend it in using a whisk. Gradually pour in the milk while stirring. The batter should start thick and thin out as more milk is added. If the batter remains too thick, add a bit more milk. Let the mixture sit for 10-15 minutes.
- Preheat a nonstick skillet over medium heat. Use a brush or paper towel to lightly coat the surface with a small amount of vegetable oil.
- Transfer the pancake batter into a squeezable bottle or use a zip-top bag. If using a zip-top bag, snip a small hole in one of the bottom corners to pipe out the batter.
- When the skillet is hot, squeeze tiny dots of batter with some space between each. Cook the small pancakes until bubbles form on the surface and they appear dry. Flip them with a spatula and cook the other side for 30-40 seconds or until golden. Continue this process with the remaining batter, occasionally re-greasing the pan as needed.
