- 1 can black beans, drained and rinsed
- 1 medium butternut squash, peeled and cubed
- 1 bunch collard greens, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Olive oil
Instructions
- Heat a generous amount of olive oil in a large pot over medium heat. Once the oil shimmers, add the diced onion and minced garlic. Sauté until the onion becomes translucent.
- Add the cubed butternut squash and drained black beans to the pot, stirring until everything is well coated in the oil.
- Pour in the vegetable broth to bring all the flavors together. Stir in the cumin, smoked paprika, salt, and pepper, then bring the mixture to a boil.
- Reduce the heat and allow it to simmer for about 20 minutes, or until the butternut squash turns tender.
- Stir in the chopped collard greens and cook for an additional 5-7 minutes until they wilt and become tender. Adjust the seasoning if necessary and serve warm.
Notes
Pre-soak dried beans overnight for better tenderness. Customize spices to your taste and add a squeeze of lemon or lime before serving.
