  • 1 can black beans, drained and rinsed
  • 1 medium butternut squash, peeled and cubed
  • 1 bunch collard greens, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat a generous amount of olive oil in a large pot over medium heat. Once the oil shimmers, add the diced onion and minced garlic. Sauté until the onion becomes translucent.
  2. Add the cubed butternut squash and drained black beans to the pot, stirring until everything is well coated in the oil.
  3. Pour in the vegetable broth to bring all the flavors together. Stir in the cumin, smoked paprika, salt, and pepper, then bring the mixture to a boil.
  4. Reduce the heat and allow it to simmer for about 20 minutes, or until the butternut squash turns tender.
  5. Stir in the chopped collard greens and cook for an additional 5-7 minutes until they wilt and become tender. Adjust the seasoning if necessary and serve warm.

Notes

Pre-soak dried beans overnight for better tenderness. Customize spices to your taste and add a squeeze of lemon or lime before serving.
