Ingredients

  • 1 can black beans, drained and rinsed
  • 1 large sweet potato, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion becomes translucent.
  2. Add the diced sweet potato to the pot and cook for about 5 minutes.
  3. Stir in the black beans, vegetable broth, cumin, chili powder, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat and let simmer for about 20-25 minutes or until the sweet potatoes are tender.
  5. Use an immersion blender to puree the soup until smooth, or leave it chunky as desired.
  6. Serve hot, garnished with fresh cilantro if using.
