- 1 can black beans, drained and rinsed
- 1 large sweet potato, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Olive oil
- Fresh cilantro for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and minced garlic, sauté until the onion becomes translucent.
- Add the diced sweet potato to the pot and cook for about 5 minutes.
- Stir in the black beans, vegetable broth, cumin, chili powder, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and let simmer for about 20-25 minutes or until the sweet potatoes are tender.
- Use an immersion blender to puree the soup until smooth, or leave it chunky as desired.
- Serve hot, garnished with fresh cilantro if using.
Notes
For a creamier texture, consider adding a splash of coconut milk during blending. Adjust spices based on your preferences.
