  • 1 onion, diced

  • 1 bell pepper, diced
  • 2 cups chicken broth or water
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large pot, brown the sausage over medium heat until cooked through.
  2. Add the diced onion, bell pepper, and minced garlic. Sauté until the vegetables are softened.
  3. Stir in the black beans, rice, chicken broth, cumin, smoked paprika, salt, and pepper.
  4. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Fluff with a fork before serving, garnish with fresh cilantro if desired.
