Delicious homemade blackberry pistachio bars with a buttery crust and fresh fruit filling
Ingredients

- 2 cups fresh blackberries
- 1 cup chopped pistachios
- 1 1/2 cups all-purpose flour
- 1 cup unsalted butter
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1 tbsp lemon zest
Instructions
- Preheat oven to 350°F and line a 9×13 inch baking pan with parchment paper
- Cream butter and sugars until light and fluffy
- Mix in eggs and vanilla extract
- Gradually add flour and salt to create the base
- Spread 2/3 of the batter in the pan, top with blackberries and pistachios
- Crumble remaining batter on top
- Bake for 45-50 minutes until golden brown
