  • 2 cups fresh blueberries
  • 3 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 1/4 teaspoon cinnamon
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a bowl, combine blueberries, sugar, lemon juice, cornstarch and cinnamon.
  2. Place about 2 tablespoons of the blueberry mixture on each egg roll wrapper.
  3. Fold the sides of the wrapper over the filling, then roll up tightly.
  4. Seal the edges with a little water.
  5. Heat oil to 350°F and fry rolls until golden brown, about 2-3 minutes.
  6. Alternatively, bake at 375°F for 15-18 minutes until golden brown.
  7. Dust with powdered sugar before serving.
