- 8 egg roll wrappers
- 2 cups fresh blueberries
- 3 tablespoons sugar
- 1 tablespoon lemon juice
- 1 teaspoon cornstarch
- 1/4 teaspoon cinnamon
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- In a bowl, combine blueberries, sugar, lemon juice, cornstarch and cinnamon.
- Place about 2 tablespoons of the blueberry mixture on each egg roll wrapper.
- Fold the sides of the wrapper over the filling, then roll up tightly.
- Seal the edges with a little water.
- Heat oil to 350°F and fry rolls until golden brown, about 2-3 minutes.
- Alternatively, bake at 375°F for 15-18 minutes until golden brown.
- Dust with powdered sugar before serving.
Notes
- These can be prepared ahead and fried or baked just before serving.
- Try with different fruits like strawberries, cherries, or apples.
- For a less sweet version, reduce the sugar to 2 tablespoons.
