- 1 small green cabbage, shredded
- 1 small purple cabbage, shredded
- 2 carrots, grated
- 1/2 red onion, thinly sliced
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 2 tablespoons sugar
- Salt and pepper to taste
- Optional: chopped jalapeños for spice
Instructions
- In a large bowl, combine the shredded cabbages, grated carrots, and sliced red onion.
- In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, sugar, salt, and pepper until smooth.
- Pour the dressing over the cabbage mixture and toss until well coated.
- If desired, add chopped jalapeños for an added kick.
- Chill in the refrigerator for at least 30 minutes before serving to let the flavors meld.
Notes
For a crunchier texture, use fresh ingredients. Experiment with variations by adding apples or raisins, and don’t add the dressing until serving if making ahead.
