- 4 tablespoons butter
- 1 cup panko breadcrumbs
- 2 tablespoons fresh parsley, chopped

- 2 tablespoons olive oil
- Salt and black pepper to taste

Instructions
- Preheat your oven to 400°F. Butter a 9×13 inch baking dish.
- Pat your cod fillets dry and season both sides generously with salt and black pepper.
- Arrange the fillets in the baking dish, ensuring there is enough space between them for even cooking.
- Melt 4 tablespoons of butter in a small saucepan over medium heat until it is foaming, about 2 minutes.
- Remove the pan from the heat and stir in 1 cup of panko breadcrumbs, 2 tablespoons of chopped parsley, 1 teaspoon of garlic powder, and the zest of 1 lemon. Mix until the mixture resembles wet sand.
- Divide the breadcrumb mixture evenly over the fillets, pressing gently to adhere.
- Drizzle about 2 tablespoons of fresh lemon juice and 2 tablespoons of olive oil over the top.
- Bake for 12-15 minutes until the fish flakes easily and the topping is golden brown.
