  • 4 tablespoons butter
  • 1 cup panko breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • Extra butter for greasing the dish

Instructions

  1. Preheat your oven to 400°F. Butter a 9×13 inch baking dish.
  2. Pat your cod fillets dry and season both sides generously with salt and black pepper.
  3. Arrange the fillets in the baking dish, ensuring there is enough space between them for even cooking.
  4. Melt 4 tablespoons of butter in a small saucepan over medium heat until it is foaming, about 2 minutes.
  5. Remove the pan from the heat and stir in 1 cup of panko breadcrumbs, 2 tablespoons of chopped parsley, 1 teaspoon of garlic powder, and the zest of 1 lemon. Mix until the mixture resembles wet sand.
  6. Divide the breadcrumb mixture evenly over the fillets, pressing gently to adhere.
  7. Drizzle about 2 tablespoons of fresh lemon juice and 2 tablespoons of olive oil over the top.
