Ingredients

  • 2 large flour tortillas (2 pieces)
  • 1 cup (240 ml) shredded beef cheddar cheese (about 4 ounces (113 g)/113 grams)
  • 1 cup (240 ml) shredded beef Monterey Jack cheese (about 4 ounces (113 g)/113 grams)
  • 4 large eggs
  • 1 tablespoon (15 ml) vegetable oil (14 grams)
  • 1/4 cup (60 ml) diced bell pepper (37 grams)
  • 1/4 cup (60 ml) diced onion (37 grams)
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup (60 ml) chopped fresh cilantro (15 grams)
  • 1 avocado, sliced
  • Salsa, for serving

Instructions

  1. Crack the eggs into a bowl, add salt and black pepper to taste, and whisk until well combined.
  2. Heat a non-stick skillet over medium heat and add the butter.
  3. Once the butter is melted, add the diced bell pepper and onion to the skillet.
  4. Sauté the vegetables for 3-4 minutes until they are soft.
  5. Pour the whisked eggs into the skillet and gently stir to scramble.
  6. Cook the eggs until just set, then remove from heat and set aside.
  7. Place a tortilla in a separate large skillet over medium-low heat.
  8. Sprinkle half of the cheddar and Monterey Jack cheese evenly over the tortilla.
  9. Layer half of the scrambled eggs over the cheese.
  10. Sprinkle half of the chopped cilantro over the eggs.
  11. Add half of the avocado slices on top.
  12. Place a second tortilla on top and press down gently.
  13. Cook the quesadilla for 2-3 minutes until the bottom tortilla is golden and the cheese begins to melt.
  14. Carefully flip the quesadilla and cook the other side for another 2-3 minutes until golden.
  15. Remove the cooked quesadilla from the skillet and repeat steps 7-14 with the remaining ingredients.
  16. Cut the quesadillas into wedges and serve with salsa on the side.
