  • 1 tablespoon vegetable oil (15 ml)
  • 4 eggs, room temperature, lightly beaten (4 eggs, room temperature, lightly beaten)
  • 4 strips of beef bacon, cooked (4 strips of beef bacon, cooked)
  • 1 field tomato, seeded and diced (1 field tomato, seeded and diced)
  • 1/4 cup cheddar cheese, grated (30 g cheddar cheese, grated)
  • 2 soft flour tortillas (2 soft flour tortillas)
  • salt and pepper to taste (salt and pepper to taste)

Instructions

  1. Heat vegetable oil over medium heat in a medium-sized pan.
  2. Pour in the eggs and stir them gently until scrambled.
  3. Lay out the flour tortillas on your countertop and evenly distribute the scrambled eggs onto the middle of each tortilla.
  4. Place two pieces of beef bacon on top of each portion of eggs.
  5. Sprinkle the diced tomatoes between the tortillas, followed by the grated cheddar cheese. Season with salt and pepper as desired.
  6. Fold in the sides of the tortillas and roll them tightly into wraps.
  7. Place the wraps on a griddle and heat them until the cheese is melted, approximately 8 to 10 minutes. Slice them in half and enjoy.
