- 1 large head of fresh broccoli
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups shredded sharp cheddar cheese
- 1 cup heavy cream
- Salt and black pepper to taste
Instructions
- Heat olive oil in a heavy-bottomed pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for an additional minute.
- Pour in the vegetable broth and add the chopped broccoli. Bring to a simmer, cover, and cook for about 10 minutes or until the broccoli is tender.
- Blend the soup until smooth using an immersion blender or by transferring it to a blender in batches.
- Return the blended soup to the pot over low heat. Stir in the heavy cream and gradually add the cheese, mixing until melted and creamy. Adjust salt and pepper to taste.
- Serve hot with your favorite bread for dipping.
Notes
For extra creaminess, replace heavy cream with half-and-half. Add fresh herbs for more flavor.
