  • 2 tablespoons butter

  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and minced garlic. Cook until softened, around 3-4 minutes.
  3. Stir in the broccoli florets and cook for a few more minutes.
  4. Pour in the vegetable broth, bringing the mixture to a boil.
  5. Reduce the heat and let it simmer for about 10 minutes until the broccoli becomes tender.
  6. Use an immersion blender to puree the soup until smooth, or leave it chunky if preferred.
  7. Stir in the milk and shredded cheddar cheese, ensuring that the cheese melts completely.
  8. Add salt, black pepper, and nutmeg to taste.
  9. Serve warm in bowls, garnished with additional cheese if desired.
