- 1/4 teaspoon nutmeg
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and minced garlic. Cook until softened, around 3-4 minutes.
- Stir in the broccoli florets and cook for a few more minutes.
- Pour in the vegetable broth, bringing the mixture to a boil.
- Reduce the heat and let it simmer for about 10 minutes until the broccoli becomes tender.
- Use an immersion blender to puree the soup until smooth, or leave it chunky if preferred.
- Stir in the milk and shredded cheddar cheese, ensuring that the cheese melts completely.
- Add salt, black pepper, and nutmeg to taste.
- Serve warm in bowls, garnished with additional cheese if desired.
