- 12 ounces bacon (12 slices)
- 15 ounces pineapple chunks (canned or fresh, 24 pieces)
- ¼ cup light brown sugar
- 1 teaspoon smoked paprika (optional)
Instructions
- Preheat your oven to 400°F.
- Line a baking pan with aluminum foil and place a wire rack on top.
- Cut each bacon slice in half.
- Drain canned pineapple and let it sit on paper towels.
- Mix ¼ cup of light brown sugar with smoked paprika if desired.
- Wrap a piece of bacon around each pineapple chunk, rolling them tightly.
- Coat the bacon-wrapped pineapple in the brown sugar mixture.
- Place each piece on the wire rack, bacon end underneath.
- Set the sheet pan in the cold oven and bake for 20 minutes.
- Rotate the pan 180 degrees and cook for another 20 minutes.
- Check for crispiness; add 5 more minutes if needed or broil for 1-2 minutes.
- Remove the bites from the rack and serve.
Notes
For extra flavor, let the wrapped pineapple sit in the brown sugar mixture. Adjust smoked paprika for desired heat.
