Ingredients

  • 12 ounces bacon (12 slices)
  • 15 ounces pineapple chunks (canned or fresh, 24 pieces)
  • ¼ cup light brown sugar
  • 1 teaspoon smoked paprika (optional)

Instructions

  1. Preheat your oven to 400°F.
  2. Line a baking pan with aluminum foil and place a wire rack on top.
  3. Cut each bacon slice in half.
  4. Drain canned pineapple and let it sit on paper towels.
  5. Mix ¼ cup of light brown sugar with smoked paprika if desired.
  6. Wrap a piece of bacon around each pineapple chunk, rolling them tightly.
  7. Coat the bacon-wrapped pineapple in the brown sugar mixture.
  8. Place each piece on the wire rack, bacon end underneath.
  9. Set the sheet pan in the cold oven and bake for 20 minutes.
  10. Rotate the pan 180 degrees and cook for another 20 minutes.
  11. Check for crispiness; add 5 more minutes if needed or broil for 1-2 minutes.
  12. Remove the bites from the rack and serve.

Notes

For extra flavor, let the wrapped pineapple sit in the brown sugar mixture. Adjust smoked paprika for desired heat.
