- 4–5 pound beef brisket
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup Grade A Dark Color, Robust Taste maple syrup
- 1/2 cup beef broth
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 1 large onion, sliced
- 2 tablespoons apple cider vinegar
- 1 tablespoon fresh rosemary, chopped
Instructions
- Preheat oven to 325°F (165°C).
- Season brisket generously with salt and pepper on all sides.
- Heat olive oil in a large Dutch oven over medium-high heat. Sear the brisket on all sides until browned, about 3-4 minutes per side.
- Remove brisket and set aside. Add onions to the pot and sauté until softened, about 3 minutes.
- Add garlic and cook for another minute until fragrant.
- In a bowl, whisk together maple syrup, beef broth, soy sauce, and apple cider vinegar.
- Return brisket to the pot, pour the maple mixture over it, and sprinkle with rosemary.
- Cover with a tight-fitting lid and transfer to the oven. Cook for 3-4 hours or until fork-tender.
- Once done, remove brisket to a cutting board and let rest for 15 minutes.
- Meanwhile, skim fat from the cooking liquid and simmer the sauce on the stovetop until reduced by half.
- Slice brisket against the grain and serve with the reduced maple sauce.
Notes
- Look for a brisket with good marbling for the most tender results.
- For a smokier flavor, add 1 teaspoon of liquid smoke to the maple mixture.
- This recipe can be made in a slow cooker on low for 8-10 hours.
- Leftover brisket makes excellent sandwiches the next day.
