Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and brown sugar until smooth.
  3. Gradually mix in the flour and salt until the dough comes together.
  4. Add the vanilla extract and mix until combined.
  5. Form the dough into a log shape, wrap in plastic wrap, and refrigerate for at least 1 hour.
  6. Once chilled, slice the dough into 1/4 inch thick rounds.
  7. Place the cookies on a baking sheet lined with parchment paper.
  8. Sprinkle the tops with granulated sugar.
  9. Bake for 12–15 minutes or until the edges are lightly golden.
  10. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Use room temperature butter for easier mixing. If short on time, chill the dough for 30 minutes instead of 1 hour.
