Description

Crispy and flavorful buffalo chicken taquitos perfect for game day or a weeknight dinner.


Ingredients

  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo wing sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 8 small flour or corn tortillas
  • Oil for frying
  • Blue cheese or ranch dressing for dipping

Instructions

  1. In a bowl, mix the shredded chicken and buffalo wing sauce until well combined.
  2. Lay out a tortilla on a clean surface and place a portion of the buffalo chicken mixture and some cheese in the center.
  3. Roll the tortilla tightly around the filling.
  4. Heat oil in a pan over medium heat.
  5. Fry the taquitos, seam-side down, until golden and crispy on all sides.
  6. Remove and drain on paper towels. Serve warm with blue cheese or ranch dressing for dipping.

Notes

For extra spice, consider adding fresh jalapeños to the filling or serve with a spicier dipping sauce. If you have leftover rotisserie chicken, it works great in this recipe.
