- 1 teaspoon dried thyme
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chopped onion, sliced carrots, and celery; sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute.
- Pour in the broth, add the diced tomatoes, chopped green beans, and dried thyme; season with salt and pepper.
- Bring to a boil, then reduce heat and let the soup simmer for 15 to 20 minutes.
- If desired, stir in cooked pasta or rice before serving.
