Ingredients

  • 1 cup green beans, chopped
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion, sliced carrots, and celery; sauté until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Pour in the broth, add the diced tomatoes, chopped green beans, and dried thyme; season with salt and pepper.
  5. Bring to a boil, then reduce heat and let the soup simmer for 15 to 20 minutes.
  6. If desired, stir in cooked pasta or rice before serving.
