Ingredients
- – 1 cup (227g) butter, room temperature
- – 1 3/4 cups (350g) brown sugar, packed
- – 2 large eggs, room temperature
- – 1 teaspoon (5 ml) vanilla
- – 2 cups (250g) all-purpose flour
- – 1 teaspoon (5 ml) baking powder
- – 1/4 teaspoon (1 ml) salt
- – 1 1/2 cups (360 ml) finely grated and drained zucchini, packed
- – 1 1/2 cups (360 ml) chocolate chips
Instructions
- Set your oven to 350°F and prepare a 9×13 baking dish by either spraying it with non-stick spray or coating it with butter and flour.
- In a large mixing bowl, combine the butter and brown sugar. Use a hand mixer to blend them until they become light and fluffy.
- Introduce the eggs and vanilla into the butter mixture, then blend for 1 to 2 minutes until everything is well mixed, scraping the sides of the bowl as necessary.
- Incorporate the flour, baking powder, and salt into the mixture and stir on medium-low speed until just mixed.
- Add the finely grated zucchini and continue mixing on a low setting. The batter should be somewhat loose; if it feels dry, let it rest for about 5 minutes.
- Gently fold in 1 cup of chocolate chips using a spatula.
- Transfer the batter to the prepped baking dish, then sprinkle the remaining chocolate chips on top.
- Bake for around 40 minutes, checking to ensure it’s done. A toothpick inserted should come out with a few crumbs but no wet batter, and the top and edges should look darker.
