- 1 pound ground beef or turkey
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 head of cabbage, chopped
- 1 can diced tomatoes
- 4 cups beef or vegetable broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 cup rice (optional)
Instructions
- In a large pot, brown the ground beef or turkey over medium heat. Drain excess fat.
- Add the chopped onion and minced garlic; sauté until the onion is translucent.
- Stir in the chopped cabbage and cook until it starts to soften.
- Add the diced tomatoes, broth, Worcestershire sauce, dried thyme, salt, and pepper. If using, add the rice.
- Bring to a boil, then reduce heat to low and simmer for about 30 minutes or until the cabbage is tender and the rice is cooked.
- Serve hot.
Notes
For a thicker soup, increase the amount of rice. Pair with crusty bread or a fresh salad for a complete meal.
