Ingredients

  • 1 pound ground beef or turkey
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 head of cabbage, chopped
  • 1 can diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup rice (optional)

Instructions

  1. In a large pot, brown the ground beef or turkey over medium heat. Drain excess fat.
  2. Add the chopped onion and minced garlic; sauté until the onion is translucent.
  3. Stir in the chopped cabbage and cook until it starts to soften.
  4. Add the diced tomatoes, broth, Worcestershire sauce, dried thyme, salt, and pepper. If using, add the rice.
  5. Bring to a boil, then reduce heat to low and simmer for about 30 minutes or until the cabbage is tender and the rice is cooked.
  6. Serve hot.

Notes

For a thicker soup, increase the amount of rice. Pair with crusty bread or a fresh salad for a complete meal.
