- 1 pound chicken breasts or thighs
- 8 ounces rotini pasta
- 2 tablespoons olive oil
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 cloves minced garlic
- 2 tablespoons butter
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ cup cheddar cheese
- ¼ cup freshly chopped parsley for garnish
Instructions
- Cook the rotini according to the package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add diced chicken and season with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook for 6-8 minutes until golden brown and cooked through.
- Remove chicken from the skillet and set aside. In the same skillet, melt butter and sauté minced garlic for about 1 minute.
- Stir in heavy cream and chicken broth. Bring to a gentle simmer.
- Add cooked chicken back to the skillet, then gradually mix in mozzarella, Parmesan, and cheddar cheese until melted.
- Toss in the drained rotini, stirring to combine and coat the pasta in the cheesy sauce.
- Garnish with freshly chopped parsley before serving.

For a flavor boost, consider marinating the chicken in olive oil and Cajun seasoning ahead of time. Adjust seasonings to taste, and feel free to add vegetables like spinach or bell peppers for extra nutrition.
