  • 1 teaspoon Cajun seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 4 cups (960 g) chicken broth
  • 4 large russet potatoes, peeled, cubed
  • ½ cup (119 g) heavy whipping cream
  • 1 cup (113 g) mild cheddar cheese, shredded
  • Parsley, chopped for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the sliced andouille sausage and cook until browned on both sides, about 5 minutes.
  2. Add the diced onion, celery, and red bell pepper to the pot. Sauté until the vegetables become tender, roughly 4-5 minutes.
  3. Stir in the minced garlic, Cajun seasoning, kosher salt, black pepper, paprika, and cayenne pepper. Cook for an additional minute to let the spices release their aroma.
  4. Pour in the chicken broth and bring the mixture to a boil.
  5. Add the cubed russet potatoes and reduce the heat to a simmer. Cook until the potatoes soften, about 15-20 minutes.
  6. Stir in the heavy whipping cream and shredded cheddar cheese. Mix until the cheese melts and the soup becomes creamy.
  7. Serve hot, garnished with freshly chopped parsley.

Notes

For an extra kick, adjust the cayenne pepper to your spice preference. If you prefer a spicier experience, consider using spicy sausage.
