  • 1 teaspoon Cajun seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 4 cups (960 ml) chicken broth
  • 4 large russet potatoes, peeled, cubed
  • ½ cup (119 ml) heavy whipping cream
  • 1 cup (113 g) mild cheddar cheese, shredded
  • Parsley, chopped for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the andouille sausage and sauté until browned, about 5 minutes.
  3. Incorporate the diced onion, celery, and red bell pepper. Sauté until the vegetables soften, about 4-5 minutes.
  4. Stir in the minced garlic, Cajun seasoning, kosher salt, black pepper, paprika, and cayenne pepper. Cook for an additional minute to toast the spices.
  5. Pour in the chicken broth and bring the mixture to a boil.
  6. Add the cubed russet potatoes and reduce the heat to a simmer. Cover and cook until the potatoes are tender, about 15-20 minutes.
  7. Pour in the heavy cream and stir well. Incorporate the shredded cheddar cheese while stirring until melted and combined.
  8. Adjust seasoning if desired before serving. Garnish with chopped parsley.
