- 4 cups (960 ml) chicken broth
- 4 large russet potatoes, peeled, cubed
- ½ cup (119 ml) heavy whipping cream
- 1 cup (113 g) mild cheddar cheese, shredded
- Parsley, chopped for garnish
Instructions
- Heat the vegetable oil in a large pot over medium heat.
- Add the andouille sausage and sauté until browned, about 5 minutes.
- Incorporate the diced onion, celery, and red bell pepper. Sauté until the vegetables soften, about 4-5 minutes.
- Stir in the minced garlic, Cajun seasoning, kosher salt, black pepper, paprika, and cayenne pepper. Cook for an additional minute to toast the spices.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the cubed russet potatoes and reduce the heat to a simmer. Cover and cook until the potatoes are tender, about 15-20 minutes.
- Pour in the heavy cream and stir well. Incorporate the shredded cheddar cheese while stirring until melted and combined.
- Adjust seasoning if desired before serving. Garnish with chopped parsley.
