  • ½ red bell pepper, seeded and diced
  • 2 teaspoons garlic, minced
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • 4 cups (960 g) chicken broth
  • 4 large russet potatoes, peeled and cubed
  • ½ cup (119 g) heavy whipping cream
  • 1 cup (113 g) mild cheddar cheese, shredded
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add sliced andouille sausage and cook until browned, about 3 to 4 minutes.
  3. Stir in diced onion, celery, and red bell pepper; cook until vegetables soften, about 5 minutes.
  4. Add in minced garlic and stir; cook for another minute until fragrant.
  5. Blend in Cajun seasoning, kosher salt, black pepper, paprika, and cayenne pepper.
  6. Pour in chicken broth and bring to a gentle simmer.
  7. Add cubed russet potatoes, cover, and permit them to cook until tender, around 15 to 20 minutes.
  8. After the potatoes are tender, stir in heavy whipping cream.
  9. Finally, add shredded mild cheddar cheese and mix until melted.
  10. Taste and adjust seasoning if needed.
  11. Serve hot, garnished with fresh parsley.
